Mexican Pasta
TGIF! I was looking around other food blogs and saw that Kath made a great Mexican Pasta dish this week that she found off Chelsea’s blog. I thought it looked amazing and had most of the ingredients on hand to make. You can find the original recipe here. I altered it a little, I used ground turkey instead of ground beef and omitted the olives (hate them) and added peppers instead. I also cut the recipe in half and still have a lot of leftovers to graze on this weekend.
Here are the list of ingredients for Mexican Pasta:
1/2 lb of pasta (I used ziti rigati)
1/2 lb of ground turkey
1 small onion
1/2 pepper
1/2 can of corn (I used the 15 oz)
1/2 can of diced tomatoes (I used the 15 oz)
A few dashes of chili powder, garlic powder, cayene pepper, paprika, salt & pepper
Toppings for one serving: 1/2 avocado, 1 dollop of greek yogurt (or sour cream), A sprinkle of shredded cheese
First, I chopped up a small onion and 1/2 of an orange pepper. Sauteed them in a pan with some olive oil.
Next, I added the meat to brown with the onions and peppers.
In went the corn, diced tomatoes and all the spices.
Once the pasta was done, I added it to the turkey mixture.
Mixed it well and heated through. You can adjust the seasonings as necessary.
Diced the avocado for topping.
I also added the cheese and greek yogurt to the top.
This was excellent, so filing and tasty. I loved the toppings too!
Now, I am sipping on a glass of Prosecco and catching up on my DVR. Enjoy your night and the long weekend!

I have off on Monday and am super excited as well! Mexican pasta looks delicious…don’t like olives either. YUMMY friday night dinner.
